2006 ZIMRI CELLARS PINOT NOIR
Chehalem Mountain Vineyards, Chehalem Mountain AVA Willamette Valley, Oregon

 

Harvested from one of the oldest vineyards planted in the `Chehalem Mountains comes this elegant hand-crafted Pinot Noir. The bright berry and spice nose combined with soft supple tannins and rich mid-palate flavors of blackberry and black cherry create a graceful wine with along fruit finish complimented by the smooth tannins and oak..   The fruit was de-stemmed and cold soaked for 5 days before primary fermentation was induced.  Three different yeast strains were used, in small, controlled, open top fermentations.  This wine was aged in twenty percent new French oak barrels for nineteen months.
Brix at harvest: 25.5, TA: 0.58 g/100ml, pH: 3.57, Alcohol: 14.4%, Cases bottled: 251, Date Bottled: 5/2/08

2006 ZIMRI CELLARS CHARDONNAY
Yamhill Vineyards, Yamhill-Carlton District
Willamette Valley, Oregon This 2006 Chardonnay offering is from a small vineyard in Yamhill.  The harvest came in very clean with full, ripe flavors.  This is a style that focuses on letting the true character of the chardonnay grape take center stage.  Following cold fermentation in 20% new french oak, the wine underwent a partial malolactic giving the wine its beautiful mid-palate. The barrels were stirred for the first 3 months then settled and aged Sur Lie for 11 months. The chardonnay fruit shows on the nose with subtle aroma of soft vanilla and butterscotch with a nice hint of oak. On the palate, the creamy texture and bright tangerine like flavors blend well with the oak to create a lingering finish of fruit and vanilla.
